  • 1 head red cabbage
  • 1 onion
  • Salt
  • ½

Method

Shred cabbage coarsely. Chop onion. Salt cabbage and onion and let stand for 10 minutes. Squeeze out liquid. Cube salt pork and fry it. Add the cabbage and onion, the wine and lemon juice. Cover and simmer for 20 minutes. Brown the duck in the oven. Cut it at joints and cover cabbage with it. Season to taste. Cook until tender. Heap cabbage on platter and surround with duck.
