Potatoes and Mushrooms

  • Small new potatoes
  • ¼ cup butter
  • 2 tablespoon green onions or chives
  • ½ lb. mushrooms, chopped
  • 1 cup meat stock
  • 2 egg yolks
  • 1 teaspoon white wine or lemon juice
  • Salt and pepper


Cook new potatoes until tender. Drain and dry. Place in casserole, adding butter and chopped onion. Add mushrooms and stock to which you have added the egg yolks diluted with wine or lemon juice. Season. Bake 30 minutes in 350° oven.
