Wash potatoes with brush and rinse in several waters. Cover with boiling water and let stand for 10 minutes. Drain water. Place potatoes in kettle, cover with boiling water, add salt and bring to a boil rapidly. Reduce heat and boil until tender. Drain, remove cover and return to fire to allow steam to escape. Serve immediately with butter and salt.
