Rice the boiled potatoes. Beat eggs well. Combine with flour, salt and potatoes. Fry small cubes of bread brown in butter with a slice of onion. Shape potato mixture around bread cubes into small balls. Drop into slowly boiling salted water. Cover tightly and let cook for 15 minutes. Do not lift cover before that time as the dumplings will fall and be heavy.
