Babka—Podolian Style

Babka Podolska


  • ½ cup sugar
  • 1 teaspoon salt
  • ½ cup butter
  • 1 ¼ cups milk, scalded
  • 2 yeast cakes
  • 5 cups flour
  • 4 eggs, beaten
  • 1 tablespoon grated orange rind
  • 1 tablespoon grated lemon rind
  • ½ cup almonds, chopped
  • 1 cup raisins


Scald milk, pour over sugar and butter. Cool. Dissolve yeast with a little of the warm mixture and add to remaining milk mixture. Add one-half of the flour and beat well. Add salt to eggs and beat until thick. Add to mixture and mix well. Add remaining ingredients. Knead for 15 minutes. Cover and let rise until double in bulk. Place in well-buttered tube pan, sprinkled with fine bread crumbs and bake 45 minutes in 350° oven.
