Cheese Filling


  • 1 lb. dry cottage cheese
  • ½ teaspoon vanilla
  • 4 eggs
  • 1 cup heavy cream
  • 1 cup sugar
  • Juice of 1 lemon
  • ½ teaspoon salt
  • Grated rind of 1 lemon
  • ¼ cup flour


Press cheese through sieve. Add salt to eggs and beat thoroughly. Add sugar, flavoring and cream. Carefully fold in the cheese and flour. Mix well. Pour on graham cracker crumbs in pan. Sprinkle remaining crumbs on top. Bake 1 hour in 250° oven. At end of hour, turn off heat and leave the cake in oven for another hour. For a large cake double or triple the recipe.
