Cottage Cheese Cake



  • 3 lbs. dry cottage cheese
  • 1 teaspoon vanilla
  • 3 cups sugar
  • 1 lb. graham crackers
  • ½ cup flour
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • ½ cup sugar
  • 1 cup rich cream
  • 2 tablespoon melted butter
  • 12 medium eggs


Force cheese through colander. Sift sugar with flour and salt, add to cheese and mix. Beat egg yolks and add to cheese mixture. Add cream and flavoring, mix. Beat egg whites until stiff but not dry and fold into mixture. Roll graham crackers fine, add cinnamon, ½ cup sugar and melted butter. Save one-half cup of the crumbs for the top of the cake. Butter tube pan generously, line with the cracker crumb mixture. Pour in cheese mixture. Sprinkle with the half cup crumb mixture, bake in 350° oven for 1 ½ hours. 60 servings.
