Upside Down Cake

  • 3 eggs
  • ½ teaspoon vanilla
  • ¼ teaspoon salt
  • 2 tablespoon boiling water
  • 1 cup sugar
  • 1 cup cake flour


Beat eggs with salt until thick and lemon-colored. Add sugar gradually and beat. Add vanilla and water. Fold in the flour. In bottom of buttered pan arrange thick cooked fruit or apple sauce. Pour batter over fruit and bake for 30 minutes in 350° oven.
