No, not a tart doused in Grand Marnier and set alight, but more a sort of thin Alsatian pizza. The flambée in the name comes from the ancient way of baking it near the coals of an open fire, where the fat from the bacon would flare up when it fell. You could always make your own pizza dough, or use puff pastry at a pinch, but your best bet is to buy a ready-made pizza base, perhaps rolling it out a little to make the tart nice and crispy.
