This is a rack of pork, seasoned, often wrapped in unsmoked pancetta (belly bacon), and roasted. It is cooked with the bones intact and a few vegetables in the oven dish for flavour. Even if your butcher cuts right through the individual chops leaving them attached by a small piece of bone, you will have trouble cutting through to serve, unless you are equipped with a professional cleaver.
