Pork is a very popular meat in Tuscany and is featured in most menus in a variety of ways. This recipe, which incorporates various forms of pork, should make about 12 skewers. The pork liver bundles (fegatelli) can be put onto separate skewers with the pork fillet as they take less time to cook than the rest, and may otherwise harden during the cooking. The pieces of pork liver are seasoned with dried wild fennel flowers and wrapped in caul fat to make little bundles, which when gril
