Instead of the herbed oil here, you can add about 2 peeled, crushed garlic cloves with 2 sprigs each of rosemary and sage, and a little extra olive oil to the ovenproof dish before roasting.

Method

Preheat the oven to 200°C (400°F/Gas 6). Peel the potatoes, rinse and cut them into chunks about the size of an unshelled walnut. Put them into an ovenproof dish and add the herbed oil and olive oil. Mix well to coat all the potatoes and put into the hot oven.
