This is a beautiful antipasto or even main-course dish which can also be prepared a couple of days ahead and served cold from the refrigerator. Baccalà is generally widely available. It is unsmoked cod, which has been preserved with salt. It therefore needs to be thoroughly soaked and rinsed repeatedly to eliminate the salt (usually for about two days) before cooking. It is also possible to find ready-soaked baccalà — in which case, omit the soaking process.
