This cake, which also works well with pears, is very simple and quick to make, and can be thrown together in no time at all. You might like to add a couple of tablespoons of Vin Santo or another liqueur to the batter. It doesn’t keep very well, so make the cake the day you will eat it. Serve it on its own, or with some fresh, slightly sweetened whipped cream.
