These biscuits are twice-cooked (bis-cotto) and fill the house with a wonderful smell while baking. They are normally served with and dipped into a small glass of Vin Santo. You could even serve them with a bowl of zabaglione and fresh fruit slices, or dunk them into morning coffee. You can use other nuts in place of, or together with, the almonds.
