A pasta dish that is not so commonly found, this is charming to look at and, I think, delicious and very easy.
In a pan large enough to eventually hold all the ingredients, put the butter, sour cream, paprika to taste, a little grated nutmeg, the grated Parmesan, and salt to taste. Mix all together while they are still cold.
Cook the spaghetti in a pan of boiling salted water. About 5 minutes before the spaghetti will have reached the point of being very undercooked, put the pan with the sauce ingredients over a moderate heat.
When the spaghetti are cooked, drain in a colander and transfer them to the pan with the butter and cream mixture. Cook over a moderate heat for 5 minutes, stirring gently with two forks. Transfer to a serving dish and send to the table.
