Method

Mix the egg yolks and granulated sugar in a bowl. Heat the milk, fresh cream and cheese in a saucepan until warm. Slowly mix half the heated milk mixture into the bowl of egg-sugar mixture, then return the entire contents of the bowl to the saucepan. Continue to heat, keeping it at 180 to 182°F (82 to 83°C) and stirring constantly, until the mixture becomes thickened.
