Matcha Sponge Cake

Ingredients

  • 5 oz. (150 g) egg whites
  • 25 g (About 1 oz.) granulated sugar
  • 25 g (About 1 oz.) almond flour
  • 10 g ( oz.) unsalted butter
  • 10 g ( oz.) flour
  • 10 g ( oz.) matcha

Method

Mix all the ingredients in a Thermomix. Fill an espuma canister and follow the instructions for preparing the espuma.

Use plastic cups that are 1 in. (2.5 cm) high and more than in. (4 cm) in diameter. Poke several holes on the cups, foam in about ½ oz. (14 g) of the espuma and microwave at 600 or 700 Watts for about 35 seconds.

Remove the cakes from the cups, cut into cylinders using a in. (4 cm) ring mold and trim the cylinders to 1 in. (2.5 cm) high.
