Dashi made from dried shiitake mushrooms is a kind of shojin or vegetarian dashi, offering intense aroma and umami.

Ingredients

  • 1.8 L soft water
  • 1⅔ oz. (50 g) dried shiitake mushroom

Method

  • Wash any dirt or other impurities off the shiitake mushrooms without letting them soak. Place them in a bowl with the water and leave to soak overnight.

  • Strain through a fine sieve covered with cheese cloth.
