Simple, easily embellished or varied, this purée reheats for company and family. If you wish, add a topping of dried crumbs and pecans ground together (half and half), then dot with butter to warm up. Or dust with a combination of coriander, cinnamon, and anise. To increase or decrease, figure on 12 ounces potato and 1 medium apple per person. For fancy presentations, the mixture can be piped through a wide star tube.
