A wild, hot pink color and fruity flavor distinguish this delicious drink. While gin is my preference—particularly the aromatic Bombay gin—light rum, tequila, or vodka work equally well.
Combine cactus pears in processor or blender with gin, grapefruit juice, and sugar; purée. Press through strainer. Add lemon juice to taste. Pour over ice in 2 highball glasses and serve with a slice of lemon.
