Savory and useful, this side dish is composed of garlicky, herbed orange squash cubes, cooked until creamy on the inside, crunchy on top. Depending on the accompanying dishes, you can substitute butter for oil, or use bacon or goose fat (my favorite). Vary the herbs, as well, and you have a dish that is as versatile as potato gratin. The dish reheats nicely.
