Ingredients

  • pounds calabaza, seeded (see Preparation for whole squash)
  • About cup

Method

  1. Cut squash in pieces 2-3 inches long; then peel. Cut into ¼-inch strips.
  2. Heat 2 tablespoons oil in a large skillet. Add onions and cook over moderate heat until slightly softened, about 3 minutes. Transfer to a wide dish.
