Anyone who has visited the French West Indies will become dreamy-eyed when he sips this type of white rum and fruit drink, which instantly creates tropical nostalgia. Although I’ve not tasted this sunny yellow combination anywhere but in my own wintry New York City living room, it deserves a tropical home.

Ingredients

  • ½ pound carambolas (3 medium)
  • 2 tablespoons pale fruit liqueurCointreau, Triple Sec, banana liqueur</

Method

  1. Shave ribs off carambolas. Halve one fruit crosswise; wrap and refrigerate half. Quarter remaining fruit lengthwise; remove seeds (if any) which surround the central area. Purée seeded carambolas and liqueur. Press through a sieve. Add sugar and lime juice to taste; oversweeten slightly. Add rum.
  2. Cover and refrigerate until serving time. To serve, cut 4 slices
