One basic preparation will yield pretty, pliant ferns ready to be sauced, sautéed, or dressed for salad. Having experimented with steaming, poaching, braising, and boiling, I find that the last works far better than other methods, retaining texture and color while eliminating the bitterness that is sometimes present in these furled sprouts.
