  • 3 large eggs, separated, at room temperature
  • Pinch salt
  • teaspoon cream of tartar

Method

  1. Beat whites in large bowl of electric mixer until foamy. Add salt and cream of tartar and beat to form soft peaks. Beat in ¼ cup sugar, a tablespoon at a time, beating 1 minute after each addition.
  2. Beat yolks in smaller bowl until light; add vanilla and remaining ¼ cup sugar. Beat until light and thick. Scrape into whites and fold together delicately.
