Pineapple and Kiwi with Mango Purée

There are no limits to the fruits that benefit from proximity to a thick, golden mango purée. To meld flavors, fold together purée and fruits. For distinct flavors, arrange the fruits on plates and spoon a puddle of the sauce next to each arrangement.

Ingredients

  • 1 meaty mango, about 1 pound, peeled and cubed (see Preparation)
  • About 2 tablespoons

Method

  1. Press cubed mango through a sieve, pushing through as much pulp as possible. Add lime juice and honey to taste.
  2. Peel the pineapple; halve lengthwise. Cut in narrow crosswise wedges. Cut both ends off kiwis, then peel (I find a swivel vegetable peeler does this best). Quarter each lengthwise, then cut across in thin slices.
