Slivers of melting quince in heavy, golden-pink syrup will embellish breakfast, brunch, or teatime loaves, buns, rolls, brioche, or croissants. Spoon a little of the soft vanilla-scented confection onto a thick layer of cream cheese- or butter-gilded bread, or savor a spoonful alongside strong tea, à la russe.

Method

  1. Quarter, peel, and core quinces, placing all peelings in a nonaluminum pot. Add water to barely cover; simmer, covered, until very tender, about 45 minutes or more.
