For a refreshing salad, crunchy and forceful, try this pungent combination. If you can’t find radish sprouts, substitute trimmed watercress leaves.

Ingredients

  • 1 pound daikon (Oriental radish), peeled
  • ½ pound carrots, peeled

Method

  1. With a processor, vegetable mill, or mandoline cut daikon and carrots into fine julienne strips (or grate coarse shreds).
  2. Stir together salt, sugar, mustard, and vinegar; toss with vegetables. Blend together sour cream and cream. Cover both containers and refrigerate for I hour or more.
