Clover-radish sprouts become sweeter and greener when subjected to a quick toss over high heat, and although they will wilt, they retain their crunch. Serve as a firstcourse salad or as a vegetable side dish.

Ingredients

  • 1 very small avocado, peeled and cubed (or ½ medium)
  • 1 tablespoon lime or lemon juice

Method

  1. Set a serving dish in a low oven to heat. Combine avocado and lime juice in a bowl; toss to coat.
  2. Heat oil and garlic in wide skillet, holding the pan tipped so garlic “deepfries.” Cook until golden then discard garlic.
  3. Fluff sprouts to untangle slightly, then add to pan; with two spoons pick up and toss sprouts over high heat until just barely wilted
