Bright sugar snaps are just the right size and texture for scooping softly creamy dips—preferably rather mild ones, that will allow the clean taste of the peas to come through. Although you can serve the peas raw, a brief steam bath brings out the flavor and enhances the texture. The cream and mayonnaise dips that follow are merely beginnings: either one might be flavored in many ways to complement the sugar snaps.
