Sugar Snap Peas for Hors D’Oeuvres—with Two Dips

Bright sugar snaps are just the right size and texture for scooping softly creamy dips—preferably rather mild ones, that will allow the clean taste of the peas to come through. Although you can serve the peas raw, a brief steam bath brings out the flavor and enhances the texture.
