Serve this garlicky, hot, deep-purple relish with fried foods, roast duck or pork, or ham. Its lush texture and intense taste make a little go a long way.

Ingredients

  • 4 large tamarillos, peeled (see Preparation)
  • ¼ cup sugar
  • ½

Method

  1. Slice tamarillos lengthwise, then across into ¼-inch half-rounds. Combine in a bowl with sugar, cinnamon, and cloves; toss.
  2. Heat oil in a flameproof casserole; stir in garlic, chilies, and onions. Cook over low heat until softened slightly— about 5 minutes. Add apple, tamarillo mixture, salt, and vinegar; stir over moderate heat until mixture thickens slightly
