Difficult-to-identify flavors make this bright-green dressing a pleasing surprise: lemony, herbal, fruity, with a slight bite. Although the sauce neatly coats bittersweet endive and suave avocado, it enhances other foods as well—poached and chilled fish, cooked vegetables, or poultry.
