Bake spaghetti squash some evening while you’re making dinner, then assemble this easy salad for the next day. Slightly pleasant side dish on a bed of chicory or sandwich.

Ingredients

  • -pound spaghetti squash (vegetable spaghetti)
  • teaspoon coarse kosher salt

Method

  1. Cook squash by whichever method you prefer (see Cooking Vegetable Spaghetti.)
  2. Pull out strands with fork into a colander; toss with ¾ teaspoon salt. Let cool, draining.
