Michael Rose, chef at the Ballroom Restaurant and Tapas Bar in New York, grew up in that melting-pot city, where he “learned as much as from travelling around the world.” In the Spanish neighborhood near the old site of the High School of Music and Art, which he attended, he tasted many versions of this standard of the Latin repertoire —and came up with his own.
