  • 135 grams coarsely chopped carrots

Method

Finely grind the mushrooms, carrots, leeks, onions, and parsley separately in a grinder or food processor. If using a food processor, pulse and scrape down the sides as necessary.

Heat the oil in a stockpot. Add the vegetables, parsley, and curry powder and sweat for 2 minutes, stirring occasionally, then add the bay leaf, thyme, and 2 liters of the water. Bring to a simmer and simmer f
