  • 450 grams unsalted butter, cut into 1-inch cubes

Method

Melt the butter in a small saucepan and over low heat. Do not stir. Once the butter has melted, skim off the foamy layer that has risen to the top and discard. Carefully pour off the clear yellow liquid, the clarified butter. Discard the white milky layer in the bottom of the pan.
