  • About 55 grams finely chopped tomato pulp (from a peeled and seeded tomato)

Method

Squeeze the tomato pulp in a towel to extract excess moisture. Spread in a thin even layer on a dehydrator tray and dry completely. Let cool to room temperature.

Grind the tomato as finely as possible in a coffee or spice grinder. There may be some pieces that will not break up, so when you feel the powder is as fine as it will get, sift it through a chinois or fine-mesh conical straine
