Mole, pronounced ‘mo-lay’, rather than like the small reclusive animal, is a piquant and complex sauce used as the base for many Mexican recipes. I first came across it in a Mexican restaurant in Los Angeles some years ago, and longed to replicate it at home, but the process is as long as the ingredients list, and I shied away from it.
