It’s hard to beat the sweet simplicity of fresh apricots. Saving enough for cooking can be a challenge in itself, tempting as it is to eat them out of hand, but baked into an almond-infused tart, they’re perhaps even better than nature intended. Serve with a scoop of vegan ice cream and I’m certain that everyone will magically find a bit of room for dessert!
