While I’m typically against the brown sugar and marshmallow-laden version of sweet potato casseroles, I have to admit that the idea lends itself quite nicely to the dessert course. Vegan marshmallows are still rather hard to come by, but with a generous swirl of maple frosting, you certainly won’t miss the extra sugar.
