  • 2 Teaspoons Cornstarch
  • 1 Cup Cake Flour
  • 1 Teaspoon Baking Powder
  • ½ Cup Plain Soy or Coconut Yogurt
  • ½ Teaspoon Apple Cider Vinegar
  • ½ Teaspoon Vanilla Extract
  • Confectioner’s Sugar

Method

Preheat your oven to 350°F and line two baking sheets with Silpats.

In a medium bowl, sift together the sugar, cornstarch, flour, and baking powder, mixing to evenly distribute all of the dry ingredients. In a separate dish, mix together the yogurt, vinegar, and vanilla. Pour the yogurt mixture into the dry goods and mix with a wide spatula. It will seem very dry at first, but trust me, you won’t need any more liquid; just keep stirring until it comes together into a thick, rather stiff batter. Spoon the batter into a piping bag fitted with a large round tip (about ½ inch) and pipe 3-inch-long strips onto your prepared sheets, spacing each about 1 inch apart.

Sprinkle a light coat of confectioner’s sugar over the cookies with a sifter or fine mesh strainer, and bake for 9–12 minutes, until the cookies no longer appear shiny and are just barely browned around the edges.
