Otherwise known in my kitchen as “sunshine in a bottle,” this cheerful yellow spread was a last-ditch attempt to combat the winter blues. Though there were no fresh fruits to make jam from, I was determined to make something sweet to spread on toast, and hopefully lift my dampened spirits a bit. Seeking out the abundant citrus fruits, I wanted to try something a bit unusual, and this jam certainly is an uncommonly tasty treat! Infused with vanilla beans, it’s intensely lemon-flavored, but perfectly balanced by the sugar so that it’s not mouth-puckeringly sour. An easy way to add brightness and perk up select desserts or simply serve at breakfast, a few lovingly decorated jars of it can also make for fantastic holiday gifts.
