You can’t beat a simple pasta and tomato sauce dish – everyone in the family always loves it! This is made sweeter with the addition of a few sun-dried tomatoes and grated carrots, while the crispy vegan ‘bacon’ provides texture and protein.
Preheat the oven to 200°C/400°F/Gas 6. Lay out the vegan ‘bacon’ slices on a baking sheet, drizzle with a little of the oil and put in the oven to cook for 15–20 minutes or as per packet instructions. When cooked, remove and chop into pieces.
