Get your five a day in one dish! The cauliflower rice tossed with wholegrain rice is super-tasty, so even if you think you don’t like cauli, you will be a convert – it adds a sweet, nutty flavour.

Ingredients

  • 200 g/7 oz vegan ‘chicken’ tenders, gougons or similar

Method

  1. Cook the vegan ‘chicken’ tenders. Preheat the oven to 200°C/400°F/Gas 6 or as per packet instructions. Toss the tenders with 1 tbsp of the oil and 1 tbsp of the soy
