Summery Risotto with Peas

A risotto is comforting to eat and soothing to make. It’s also really adaptable – swap the vegetables with the seasons, and experiment using ingredients you know you like. This would be nice with a pinch of chilli flakes if you are a spice fan!

Ingredients

  • 1 tbsp vegetable oil
  • 2 tbsp vegan margarine
  • 1 onion</

Method

  1. Heat the oil and half the margarine in a large, deep pan. Add the onion and season with salt and pepper, then cook for 10 minutes to soften. Stir in the garlic and cook for another minute.
  2. Meanwhile, put the vegetable stock in a pan and bring it to a simmer. Keep it at a low simmer throughout the cooking process.
  3. Add the rice to the softened onion and
