Sausages and mash is a favourite comfort food, especially on a chilly evening. You can of course buy vegan sausages, but it’s fun to make your own. They require a little time, but are not difficult, and you could always make a big batch and freeze some for another meal.

Ingredients

For the Sausages

  • 1 tbsp vegetable oil, plus extra for cooking the sausages
  • 1 onion, peeled and finely chopped
  • 1

Method

  1. Heat the oil in a large frying pan, add the onion and cook for 10 minutes, until soft. Add the leek, apple and thyme and cook for another 5 minutes or so until the leeks are tender. Season with salt and pepper.
  2. Add the mushrooms and a little more oil if necessary, then cook for a few minutes until the mushrooms are just soft. Stir through the mustard and yeast
