These lightly battered deep-fried vegetables are the tastiest way to eat your five a day.

The secret to the perfect batter is to use fizzy water, which makes it nice and light.

Ingredients

  • 1 head of broccoli, broken into florets
  • 2 red and 2 yellow bell peppers

Method

  1. First, make the batter. Put the cornflour and flour in a large bowl, whisk to combine, then make a dip in the middle. Slowly pour in the sparking water, whisking all the time, until the batter is smooth. Put to one side.
  2. For the dipping sauce, mix together all the ingredients in a bowl and put to one side. Place some sheets of kitchen paper on a plate.
