These originally hail from India, where they are made from grated fresh coconut. Use this if you have time, but for simplicity, here they are made with desiccated coconut softened with coconut water.
Put the coconut in a large bowl and pour over the warm coconut water. Set aside for 10 minutes for the coconut to absorb the water. Cut the bread into small pieces.
