This vegan version of the BLT (Vegan Bacon, Lettuce & Tomato) hits the spot whenever you’re feeling a bit peckish. The bacon is replaced with vegan bacon slices, but you could also use fried slices of smoked soya tempeh, as described in the cooked breakfast.

  • 5–6 vegan ‘bacon’ slices

  1. Preheat the oven to 200°C/400°F/Gas 6. Put the vegan ‘bacon’ slices on a baking sheet, drizzle with the oil and put in the oven to cook for about 15 min
